A quick and flavorful Korean ground beef rice bowl topped with spicy-sweet gochujang sauce and a perfectly fried egg, perfect for a comforting weeknight meal.

  • 1 lb (450 g) ground beef (85% lean preferred)
  • 4 cups (960 ml) cooked white rice (short-grain sushi rice recommended)
  • 2 tablespoons gochujang (Korean chili paste)
  • 3 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon toasted sesame oil
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil
  • 4 eggs
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. Cook the Rice: Rinse 2 cups (400 g) of short-grain white rice under cold water until the water runs clear. Combine with 2 1/4 cups (540 ml) water in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Turn off heat and let steam covered for 10 more minutes. Fluff with a fork before serving.
  2. Make the Sauce: In a small bowl, whisk together 2 tablespoons gochujang, 3 tablespoons soy sauce, 1 tablespoon brown sugar, 3 minced garlic cloves, 1 teaspoon grated ginger, and 1 teaspoon toasted sesame oil. Set aside.
  3. Cook the Beef: Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 1 lb (450 g) ground beef, breaking it up with a spatula. Cook for 6-8 minutes until browned and cooked through. Drain excess fat if needed.
  4. Add Sauce to Beef: Pour the sauce over the cooked beef. Stir well to coat evenly. Cook for another 2-3 minutes until sauce thickens slightly and clings to the meat. Remove from heat.
  5. Fry the Eggs: In a separate nonstick pan, heat a little oil over medium heat. Crack in 4 eggs, cooking sunny-side-up until whites are set but yolks remain runny, about 3-4 minutes. For crispy edges, slightly increase heat and carefully spoon hot oil around edges.
  6. Assemble Bowls: Divide the cooked rice into 4 bowls. Top each with a generous scoop of the spicy beef mixture. Place a fried egg on top of each bowl. Garnish with sliced green onions and optional toasted sesame seeds.

Notes

Do not overcrowd the pan when browning beef to get a good sear. Let rice rest after cooking for fluffiness. Adjust sauce sweetness or heat by adding more brown sugar or gochujang. Fry eggs on medium heat for runny yolks and crispy edges. Leftovers keep well refrigerated for up to 3 days; reheat gently and fry fresh eggs before serving.
