Light Slow Cooker White Chicken Chili Game Day

A lighter, tangy white chicken chili made with Greek yogurt instead of heavy cream. Perfect for game day, this dump-and-go slow cooker recipe is creamy, satisfying, and packed with protein and fiber.

  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 2 cans (15 ounces each) cannellini beans or great northern beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 2 cans (4 ounces each) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional)
  • 1 cup plain non-fat Greek yogurt
  • Juice of 2 fresh limes
  • Salt to taste
  • 1 tablespoon olive oil (for sautéing)
  • Optional toppings: fresh cilantro, diced avocado, sliced jalapeños, shredded Monterey Jack cheese, tortilla chips

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion until soft and translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  2. Transfer sautéed onion and garlic to a 6-quart slow cooker. Add drained white beans, diced green chiles, cumin, oregano, smoked paprika, cayenne (if using), and 1 teaspoon salt. Pour in chicken broth and stir.
  3. Nestle chicken breasts or thighs into the liquid.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is tender and shreds easily.
  5. Remove chicken from slow cooker and shred with two forks.
  6. Using an immersion blender, pulse the chili a few times to break down about half the beans for creaminess. Alternatively, mash beans with a potato masher.
  7. Return shredded chicken to the slow cooker. In a small bowl, whisk Greek yogurt with a ladleful of hot chili broth to temper it, then stir the yogurt mixture into the chili.
  8. Squeeze lime juice over the chili and stir. Adjust salt and heat to taste.
  9. Serve immediately with desired toppings.

Notes

Temper the yogurt by whisking it with hot broth before adding to prevent curdling. For a thicker chili, blend more beans or stir in a cornstarch slurry. Leftovers keep for up to 4 days in the refrigerator or 3 months in the freezer.
