A lighter, hands-off sweet potato casserole made in the crockpot with a crunchy pecan streusel. Perfect for holidays or busy weeknights, this dish is creamy, sweet, and completely stress-free.

  • 2 tablespoons coconut oil, melted
  • 3 tablespoons pure maple syrup

  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 teaspoon fine sea salt
  • 1 cup pecans, chopped
  • 2 tablespoons all-purpose flour
  • 2 tablespoons packed brown sugar
  • 2 tablespoons cold butter, cut into small pieces

Instructions

  1. Prep the Sweet Potatoes: Peel sweet potatoes and cut into 1-inch cubes. Place directly into a 6-quart or larger slow cooker.
  2. Add the Flavor Base: Drizzle melted coconut oil over sweet potatoes. Add maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Toss until evenly coated.
  3. Slow Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until sweet potatoes are fork-tender.
  4. Make the Streusel: In a small bowl, combine chopped pecans, flour, and brown sugar. Add cold butter pieces and work into dry ingredients with fingers or a pastry cutter until coarse crumbs form. Refrigerate until ready to use.
  5. Mash the Potatoes: Once tender, remove lid and mash sweet potatoes in the crockpot with a potato masher, leaving some small chunks for texture. Taste and adjust sweetness if desired.
  6. Toast the Streusel: Spread streusel on a parchment-lined baking sheet. Broil for 2-3 minutes until golden and fragrant, watching closely to prevent burning.
  7. Serve: Spoon mashed sweet potatoes into a serving dish and top with toasted pecan streusel. Serve immediately.

Notes

Do not put raw streusel on hot potatoes; always toast separately. For make-ahead, cook and mash potatoes up to 2 days in advance; make streusel fresh. Adjust sweetness to taste. Use a slow cooker liner for easy cleanup.
