  • 3 tablespoons unsalted butter
  • 3 garlic cloves, smashed but left whole
  • 34 sprigs fresh thyme
  • Salt, preferably kosher or sea salt
  • Freshly ground black pepper
  • 1 tablespoon olive oil
  • Optional: 1-2 sprigs fresh rosemary
  • Optional: 1 small shallot, finely chopped

Instructions

  1. Bring the steak to room temperature for 20-30 minutes and pat dry thoroughly with paper towels.
  2. Season generously with kosher salt and freshly ground black pepper on both sides.
  3. Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat and add 1 tablespoon olive oil; heat until shimmering but not smoking.
  4. Place the ribeye steak in the pan and sear undisturbed for 2-3 minutes per side (5-7 minutes per side for medium-rare depending on thickness) until a deep brown crust forms.
  5. Reduce heat to medium-low and add butter, smashed garlic cloves, and thyme sprigs to the pan.
  6. Tilt the pan slightly and continuously spoon the melted butter over the steak for 2-3 minutes, gently flipping the steak occasionally.
  7. Check doneness with a meat thermometer: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  8. Transfer the steak to a cutting board, tent loosely with foil, and let rest for 5-10 minutes.
  9. Slice against the grain into thick slices and spoon any leftover buttery pan juices over the top before serving.

Notes

Dry the steak well before cooking to ensure a good sear. Use tongs to flip the steak to avoid piercing the meat. Rest the steak after cooking to redistribute juices. Avoid overcrowding the pan. Use room temperature butter for even basting. If pan smokes, reduce heat and ventilate kitchen.
