An indulgent yet easy French toast recipe inspired by crème brûlée, featuring a creamy custard soak and a crispy caramelized sugar crust for a luxurious breakfast treat.

Ingredients

Scale
  • 6 thick slices brioche bread (preferably day-old)
  • 4 large eggs, room temperature
  • 1 cup whole milk
  • ½ cup heavy cream
  • ⅓ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • 1 tablespoon unsalted butter
  • Caster sugar or turbinado sugar for topping (about 1 tablespoon per slice)

Instructions

  1. In a large mixing bowl, whisk together 4 large eggs, 1 cup whole milk, ½ cup heavy cream, ⅓ cup granulated sugar, 1 teaspoon pure vanilla extract, ½ teaspoon ground cinnamon, and a pinch of salt until fully combined and slightly frothy (about 3 minutes).
  2. Dip 6 thick slices of brioche bread into the custard mixture, soaking each side for about 20-30 seconds. Let excess drip off gently.
  3. Heat a non-stick skillet or griddle over medium heat and melt 1 tablespoon unsalted butter, swirling to coat evenly.
  4. Place soaked bread slices in the pan and cook for 3-4 minutes on each side until golden brown and slightly crisp.
  5. Transfer cooked slices to a heatproof surface. Sprinkle about 1 tablespoon of caster or turbinado sugar evenly over each slice.
  6. Using a kitchen torch, caramelize the sugar by moving the flame in small circles until the sugar melts and turns golden brown with crisp cracks (about 1-2 minutes per slice).
  7. Serve immediately for best texture and flavor.

Notes

If you don’t have a kitchen torch, caramelize the sugar under a broiler for 1-2 minutes, watching carefully to avoid burning. Avoid soaking bread too long to prevent sogginess. Keep cooked toast warm in a 200°F oven if needed while torching remaining slices.
