  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 teaspoon smoked paprika (optional)
  • 1/4 cup tahini (well-stirred)
  • 2 tablespoons pure maple syrup
  • 2 tablespoons warm water (plus more as needed)
  • 1 tablespoon fresh lemon juice
  • 1 small clove garlic, finely grated or minced
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon fresh parsley, finely chopped (optional)
  • Flaky sea salt (e.g., Maldon) for finishing

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash the delicata squash well, pat dry, trim off the ends, and slice crosswise into 1/2-inch thick rings.
  3. Use a melon baller or small spoon to scoop out the seeds and stringy bits from the center of each ring.
  4. Place the rings in a large bowl. Drizzle with olive oil, then sprinkle with salt, pepper, and smoked paprika (if using). Toss to coat evenly.
  5. Arrange the rings in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  6. Roast for 20-25 minutes, flipping the rings at the 15-minute mark. Roast until both sides are golden brown and the rings are tender.
  7. While the squash roasts, make the maple tahini drizzle: In a small bowl, combine tahini, maple syrup, warm water, lemon juice, grated garlic, and salt. Whisk until smooth. Adjust consistency with additional warm water if needed.
  8. Transfer the hot roasted rings to a serving platter. Drizzle generously with the maple tahini sauce, then sprinkle with toasted sesame seeds, fresh parsley (if using), and a pinch of flaky sea salt. Serve immediately.

Notes

For best texture, serve immediately after roasting. The maple tahini drizzle can be made up to 3 days in advance and stored in the fridge. To reheat leftovers, spread rings on a baking sheet and warm in a 400°F oven for about 5 minutes. Avoid microwaving.
