  • 12 large fresh oysters, shucked
  • 6 tablespoons unsalted butter, softened
  • 4 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Olive oil, for brushing the grill grate

Instructions

  1. In a small mixing bowl, combine the softened unsalted butter, minced garlic, chopped parsley, lemon juice, red pepper flakes (if using), salt, and pepper. Mix until well blended. Set aside.
  2. Using an oyster knife, carefully pry open each oyster, keeping the oyster meat in the bottom shell. Drain any excess liquid but leave some to keep the oyster moist.
  3. Preheat your grill to medium-high heat, around 375°F (190°C). Brush the grill grate with olive oil to prevent sticking.
  4. Arrange the oysters on the hot grill, shell side down, to hold the juices. Spoon about one tablespoon of the garlic butter mixture onto each oyster.
  5. Close the grill lid and cook for 5-7 minutes until the butter is bubbling and the oysters just start to curl at the edges. The shells should be slightly charred and the butter golden.
  6. If using Parmesan, sprinkle grated Parmesan over the oysters in the last minute of grilling for a golden crust.
  7. Using tongs, carefully transfer the oysters to a platter and serve immediately with extra lemon wedges.

Notes

If you want to make this recipe gluten-free or dairy-free, swap the butter for vegan butter or olive oil, and skip the Parmesan or use a dairy-free alternative. Avoid overcooking to prevent rubbery oysters. Brush grill grate generously with oil to prevent sticking. Leftovers can be stored in an airtight container in the refrigerator for up to 24 hours and reheated gently.
