  • 8 oz (227 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round pans or line with parchment paper.
  2. In a medium bowl, sift together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, mixing well after each. Add vanilla extract.
  5. Alternately add dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients. Mix on low speed just until combined.
  6. Stir in red food coloring and white vinegar.
  7. Divide batter evenly into prepared pans and smooth tops. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Rotate pans halfway through baking.
  8. Let cakes cool in pans for 15 minutes, then turn onto wire racks to cool completely.
  9. Beat cream cheese and softened butter until smooth. Gradually add powdered sugar, vanilla extract, and salt, beating until fluffy. Add milk if frosting is too thick.
  10. Slice each cake layer horizontally into two even layers (four layers total). Arrange layers on a serving plate in alternating red and white stripes, spreading frosting between each.
  11. Use frosting to create stripes on top and pipe stars on the blue corner section if desired.
