A quick and easy homemade pumpkin spice syrup that is better than Starbucks, perfect for cozy fall and winter mornings. Made with simple pantry ingredients and a seasonal twist of pumpkin puree.

  • 1 cup granulated sugar (200g)
  • 1 cup water (240ml)
  • ¼ cup pumpkin puree (60g)
  • 1 tablespoon molasses
  • 1 large cinnamon stick
  • ½ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Pour 1 cup granulated sugar and 1 cup water into a small saucepan. Stir gently over medium heat until the sugar fully dissolves, about 3 to 5 minutes, until the liquid is clear.
  2. Stir in ¼ cup pumpkin puree and 1 tablespoon molasses. Continue stirring for about 2 minutes until well combined.
  3. Add 1 cinnamon stick, ½ teaspoon ground nutmeg, ⅛ teaspoon ground cloves, and ½ teaspoon ground ginger. Bring to a gentle simmer and keep at low simmer for about 10 minutes, stirring occasionally.
  4. Remove from heat. Remove the cinnamon stick, then stir in 1 teaspoon vanilla extract and a pinch of salt.
  5. Optional: Pour the syrup through a fine mesh strainer into a clean jar or bottle for a smooth texture. Let cool slightly before sealing. Store in the refrigerator and shake well before each use.

Notes

If syrup is too thick after cooling, stir in a little warm water before use. If too thin, simmer a few extra minutes to reduce. Use fresh spices for best flavor. For vegan/refined sugar-free version, substitute white sugar with coconut sugar or maple syrup and molasses with pure maple syrup. Shake well before each use. Store in refrigerator up to two weeks.
