  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice (from 1 medium lemon)
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried oregano (optional)
  • ½ teaspoon smoked paprika

Instructions

  1. Trim any excess fat or tendons from the chicken breasts. Pound the thicker parts to an even thickness of about ¾ inch (2 cm).
  2. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, oregano, and smoked paprika.
  3. Add the chicken breasts to the bowl and toss to coat evenly. Let them marinate for at least 10 minutes at room temperature (5 minutes if short on time). For deeper flavor, marinate up to 1 hour in the fridge.
  4. Preheat your grill or grill pan to medium-high heat, around 400°F (204°C).
  5. Place the chicken breasts on the grill and cook for 6-7 minutes on the first side without moving them.
  6. Flip carefully using tongs and cook another 6-7 minutes until the internal temperature reaches 165°F (74°C).
  7. Remove from the grill and let the chicken rest for 5 minutes to lock in juices.
  8. Slice against the grain and serve with your favorite sides.

Pound chicken breasts to even thickness for uniform cooking. Marinate for at least 10 minutes for best flavor but can be as short as 5 minutes if needed.
