  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky sea salt (Maldon preferred)
  • 8 ounces (225g) brie cheese, cut into wedges
  • 1/2 cup (60g) candied pecans (or regular pecans, toasted)
  • 1/2 cup (70g) dried figs or dates
  • 1/4 cup (30g) dark chocolate chips or shaved chocolate (optional)
  • Fresh rosemary sprigs (for garnish)
  • Assorted crackers or pretzels

Instructions

  1. Make the caramel (10 minutes): In a heavy-bottomed saucepan, spread the granulated sugar in an even layer. Heat over medium heat, gently swirling the pan occasionally (don’t stir). The sugar will start to melt around the edges after 3-4 minutes. Once it turns a deep amber color—think the color of a penny—remove it from the heat immediately.   3. Prep the board (3 minutes): Place the small bowl of caramel in the center or off to one side of your board. Arrange the brie wedges around it. Start placing the apple slices in small clusters or fan them out for visual appeal. Scatter the candied pecans and dried figs in the gaps. Add the dark chocolate chips in small piles. Tuck the rosemary sprigs around the board for a pop of green.
