This quick copycat Starbucks brown sugar oat milk shaken espresso is the result of an obsession to recreate a beloved coffee shop drink. It’s even better than the original, with the secret in the shaking, the temperature of the espresso, and getting the ratios just right.

  • 2 shots of espresso (about 2 ounces total, or 60 ml)
  • 2 tablespoons (30 ml) brown sugar, packed
  • 1 tablespoon (15 ml) hot water
  • 1 cup (240 ml) oat milk
  • Ice cubes (enough to fill your serving glass, about 1 cup or 150 grams)
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of cinnamon (optional)
  • Extra brown sugar for rimming the glass (optional)

Instructions

  1. Dissolve the brown sugar. In a small bowl or directly in your shaker, combine 2 tablespoons packed brown sugar with 1 tablespoon hot water. Stir until the sugar is completely dissolved.
  2. Brew your espresso. While the sugar is dissolving, brew 2 shots of espresso (about 2 ounces total). Pour the hot espresso directly into the shaker with the dissolved brown sugar. Give it a quick stir to combine.
  3. Shake it like you mean it. Add a handful of ice cubes (about 4-5 medium cubes) to the shaker. Secure the lid tightly and shake vigorously for 15-20 seconds until the espresso becomes frothy and slightly lighter in color.
  4. Prepare your serving glass. Fill your serving glass with fresh ice cubes—enough to almost fill it.
  5. Strain and pour. Pour the shaken espresso mixture over the fresh ice in your serving glass. The shaker will hold back the melted ice from step 3.
  6. Add the oat milk. Slowly pour 1 cup of oat milk over the back of a spoon into the glass to help it layer beautifully.
  7. Stir gently and serve. Give the drink a gentle stir with a long spoon to combine the layers, or leave it layered for a more dramatic presentation. Serve immediately. If desired, sprinkle a pinch of cinnamon on top.

Notes

The espresso should be hot when you shake it, not lukewarm. Work quickly between brewing and shaking for the best results. Use fresh ice in the serving glass, not the ice from the shaker. For the best texture, use a barista blend oat milk like Oatly Barista Edition or Chobani Extra Creamy.
