  • ½ cup heavy cream
  • 8 ounces angel hair pasta
  • Fresh parsley, chopped (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Place chicken breasts between plastic wrap or in a zip-top bag and pound to about ¼ inch thickness (approx. 5 minutes).
  2. Season chicken with salt and pepper. Dredge each piece in ½ cup flour, shaking off excess (approx. 5 minutes).
  3. Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Cook chicken 3-4 minutes per side until golden and cooked through (internal temp 165°F). Remove and keep warm (approx. 8-10 minutes).
  4. Lower heat to medium. Add minced garlic to skillet and sauté for 30 seconds until fragrant.
  5. Pour in ½ cup chicken broth and scrape browned bits from pan. Stir in lemon juice and zest and capers. Simmer for 2 minutes.
  6. Reduce heat to low and whisk in ½ cup heavy cream. Let sauce thicken for 3-4 minutes, stirring occasionally. Adjust seasoning with salt and pepper.
  7. Meanwhile, cook angel hair pasta in boiling salted water according to package instructions (2-3 minutes). Drain and reserve some pasta water.
  8. Return chicken to skillet and spoon sauce over it. Warm through for 1-2 minutes.
  9. Toss pasta with sauce, adding reserved pasta water if needed to loosen. Serve chicken on pasta bed, garnished with chopped parsley.
