  • 1 medium yellow onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups beef broth, low-sodium
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Heat the oil: Place your skillet over medium-high heat and add the olive oil. Let it warm up for about 30 seconds until shimmering but not smoking.
  2. Cook the onion: Add the diced onion and cook, stirring occasionally, for 3-4 minutes until softened and translucent.
  3. Brown the beef: Add the ground beef to the skillet. Break it up with a wooden spoon and let it cook undisturbed for 2 minutes to develop brown bits. Then stir and continue cooking for another 3-4 minutes until fully browned and no longer pink. Do not drain the fat unless excessive.
  4. Add the garlic: Stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Season it up: Sprinkle the smoked paprika, dried oregano, salt, and pepper over the beef mixture. Stir well to coat evenly.
  6. Add the liquids and rice: Pour in the beef broth, diced tomatoes (with their juices), and Worcestershire sauce. Stir, scraping up any browned bits from the bottom of the pan. Then stir in the uncooked rice.
  7. Bring to a boil: Increase the heat to high and bring the mixture to a rolling boil.
  8. Reduce and simmer: Once boiling, reduce the heat to low, cover the skillet with a tight-fitting lid, and let it simmer for 18-20 minutes. Do not lift the lid during this time.
  9. Check for doneness: After 18 minutes, remove the lid carefully. The rice should be tender and the liquid mostly absorbed. If the rice is still firm, add 2 tablespoons of water, re-cover, and cook for another 2-3 minutes.
  10. Fluff and rest: Remove the skillet from the heat. Fluff the rice and beef mixture gently with a fork. Let it rest, uncovered, for 2-3 minutes.
  11. Garnish and serve: Sprinkle fresh parsley on top if using, and serve straight from the skillet.

Notes

For best texture, use long-grain rice. Do not lift the lid during simmering. For extra flavor, toast the rice in the skillet for 2 minutes before adding liquids. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
