  • 3 tablespoons white miso paste
  • 2 tablespoons honey
  • 1 tablespoon soy sauce (low-sodium preferred)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced (optional)
  • Freshly ground black pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat your broiler to high and position the oven rack about 6 inches (15 cm) from the heat source.
  2. In a mixing bowl, whisk together 3 tablespoons white miso paste, 2 tablespoons honey, 1 tablespoon soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and minced garlic until smooth and glossy. Add a teaspoon of water if glaze is too thick.
  3. Pat the cod fillets dry with paper towels and season lightly with black pepper.
  4. Using a pastry brush or spoon, spread a generous layer of the miso glaze over the top of each cod fillet.
  5. Arrange the fillets on a baking sheet lined with parchment paper or on a wire rack placed on the baking sheet.
  6. Broil the cod for 8-10 minutes, watching closely until the glaze bubbles and develops golden brown spots and the fish flakes easily with a fork.
  7. Remove from oven and let rest for 1-2 minutes. Serve immediately with lemon wedges.

Notes

Pat the fish dry before glazing to ensure proper caramelization. Watch the broiler closely to avoid burning the glaze. If glaze darkens too quickly, lower the oven rack or reduce broil heat. Leftovers keep well refrigerated for up to 2 days; reheat gently in oven or skillet, avoid microwave.
