  • 2 stalks celery, diced

Instructions

  1. Cook the rice: In a medium saucepan, add 1 cup rinsed long-grain white rice and 2 cups water or chicken broth. Bring to a boil, then reduce to low, cover, and simmer for 15 minutes until tender and fluffy. Remove from heat and let sit covered for 5 minutes.
  2. Brown the meats: While the rice cooks, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add 1/2 pound ground beef and 1/2 pound pork sausage. Break the meat up with your spoon and cook until browned and cooked through, about 7-8 minutes. Drain any excess fat if necessary.
  3. Sauté the vegetables: Add the finely chopped onion, diced green bell pepper, and celery to the skillet. Cook for about 5 minutes, stirring occasionally, until softened but still vibrant.
  4. Add garlic and spices: Stir in the minced garlic, 1 tablespoon Cajun seasoning, 1 teaspoon smoked paprika, 1/2 teaspoon cayenne pepper, and 1/2 teaspoon dried thyme. Cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
  5. Combine rice and meat mixture: Stir the cooked rice into the skillet with the meat and veggies. Add 1 cup chicken broth to moisten and bring everything together. Cook for 3-4 minutes, stirring occasionally, until heated through and slightly thickened. Taste and adjust seasoning with salt, pepper, or extra cayenne if desired.
  6. Garnish and serve: Remove from heat and sprinkle chopped green onions or parsley on top if desired. Serve immediately for best texture and flavor.

Notes

For gluten-free versions, ensure sausage and Cajun seasoning are wheat-free. You can substitute ground turkey or use cauliflower rice for a lighter or low-carb option. If rice seems dry, add a splash of broth and cover to steam. Browning the meat well adds deep flavor. Adjust cayenne pepper to control spice level. Leftovers keep well refrigerated for up to 3 days; reheat gently with added moisture.
