Refreshing Watermelon Mint Agua Fresca

A light, naturally sweet, and minty agua fresca perfect for hot summer days, combining juicy watermelon with fresh mint and lime for a refreshing drink.

  • 6 cups seedless watermelon cubes (about 1.5 pounds / 700 grams)
  • 1012 large fresh mint leaves, washed
  • 2 tablespoons fresh lime juice (from about 1 large lime)
  • 2 cups cold water (480 ml)
  • 12 tablespoons agave syrup or honey (optional, adjust to taste)
  • Ice cubes (optional, for serving)

Instructions

  1. Cube about 6 cups (1.5 lbs / 700 g) of seedless watermelon, removing rind and seeds.
  2. Place 10-12 fresh mint leaves in a large bowl or pitcher and gently muddle with a muddler or wooden spoon to release oils without shredding.
  3. Add watermelon cubes to a blender and pulse until smooth but still slightly textured.
  4. Pour blended watermelon through a fine mesh strainer or cheesecloth into the bowl or pitcher with the muddled mint, pressing pulp gently to extract juice. Discard solids or save for smoothies.
  5. Stir in 2 tablespoons fresh lime juice and 1-2 tablespoons agave syrup or honey, adjusting sweetness to taste.
  6. Pour in 2 cups cold water and stir well to combine.
  7. Refrigerate for at least 30 minutes to chill and let flavors meld. Serve over ice with a sprig of fresh mint for garnish.

Notes

Do not over-muddle the mint to avoid bitterness. Straining is optional depending on texture preference. Chill for at least 30 minutes for best flavor. Adjust sweetness based on watermelon ripeness. For a fizzy twist, substitute cold water with sparkling water.
