  • 1 package (about 9 inches) store-bought or homemade pie crust (preferably all-butter crust)
  • 3 cups frozen cherries (about 450g), thawed and drained
  • 1/2 cup almond flour (50g), finely ground
  • 1/4 cup sliced almonds (25g), toasted slightly for crunch
  • 1/3 cup granulated sugar (65g), plus extra for sprinkling on crust
  • 2 tablespoons brown sugar
  • 1 tablespoon all-purpose flour (8g)
  • 1 teaspoon almond extract
  • 1 large egg, beaten (for egg wash)
  • 2 tablespoons cold butter, cubed (28g)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the pie dough on a lightly floured surface into a rough 12-inch (30 cm) circle. Transfer to the prepared baking sheet.
  3. In a mixing bowl, combine thawed and drained cherries, granulated sugar, brown sugar, almond flour, all-purpose flour, almond extract, and a pinch of salt. Toss gently to coat evenly.
  4. Scatter cold butter cubes evenly over the cherry mixture.
  5. Spoon the cherry mixture into the center of the dough, leaving about a 2-inch (5 cm) border. Fold the edges of the dough over the cherries, pleating to create a rustic edge.
  6. Brush the dough edges with beaten egg. Sprinkle sliced almonds over the exposed cherries and edges, then dust the crust with a bit of granulated sugar.
  7. Bake for 40-45 minutes until the crust is golden brown and the filling is bubbling. If edges brown too quickly, cover loosely with foil halfway through baking.
  8. Let the galette cool on a wire rack for at least 15 minutes before slicing and serving.

Notes

Chill pie dough before rolling to prevent shrinkage and keep crust flaky. Drain frozen cherries thoroughly to avoid soggy crust. Cover crust edges with foil if browning too fast. Egg wash gives a golden, glossy finish. Variations include using fresh fruit, making vegan or gluten-free adaptations, and adding spices like cinnamon or cardamom.
