  • 1 large Granny Smith or Honeycrisp apple, peeled, cored, and finely chopped
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • ½ cup dry white wine or apple cider
  • 2 tablespoons Dijon mustard
  • ½ cup heavy cream
  • 1 teaspoon fresh thyme, chopped (optional)

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper. Let them sit at room temperature for about 10 minutes.
  2. Peel and core the apple, then dice it finely. Mince the shallot and garlic cloves.
  3. Heat 2 tablespoons of olive oil in a heavy skillet or cast iron pan over medium-high heat until shimmering but not smoking (about 3 minutes). Add the pork chops and sear undisturbed for 4-5 minutes until golden brown. Flip and cook another 4 minutes until internal temperature reaches 145°F (63°C). Remove chops and tent with foil to rest.
  4. Reduce heat to medium, add 2 tablespoons butter to the same pan. Once melted, add the minced shallot and cook for about 2 minutes until softened but not browned. Stir in garlic and cook 30 seconds more.
  5. Add the chopped apples and sauté for 3-4 minutes until they start to soften. Pour in ½ cup dry white wine or apple cider to deglaze the pan, scraping up browned bits. Let the liquid reduce by half, about 3 minutes.
  6. Stir in 2 tablespoons Dijon mustard, then pour in ½ cup heavy cream. Simmer gently for 3-5 minutes until sauce thickens slightly. Season with salt and pepper as needed. Stir in thyme if using.
  7. Spoon the sauce generously over the rested pork chops and serve immediately.

Ensure pork chops are dry before seasoning to get a perfect sear. Do not overcrowd the pan to avoid steaming. Reduce wine or cider patiently to avoid bitterness.
