  • 4 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 1 tablespoon olive oil

  • Fresh parsley, chopped, for garnish (optional)
  • Wooden or metal skewers (soak wooden skewers for at least 30 minutes if using)

Instructions

  1. Prepare the garlic butter: In a mixing bowl, combine 4 tablespoons softened unsalted butter, minced garlic, lemon zest, and a pinch of salt and pepper. Mix until well blended.
  2. Marinate the shrimp: Add the peeled and deveined shrimp to the bowl. Pour in 1 tablespoon olive oil and the juice of half the lemon. Toss gently to coat the shrimp evenly. Let sit for 10-15 minutes, but no longer than 30 minutes.
  3. Prepare the skewers: Soak wooden skewers in water for at least 30 minutes if using. Thread 4-5 shrimp onto each skewer, leaving space between each.
  4. Heat the grill: Preheat grill or grill pan over medium-high heat until hot.
  5. Grill the shrimp: Place skewers on the grill and cook 2-3 minutes per side, turning once, until shrimp are pink and opaque.
  6. Brush with extra garlic butter while grilling to keep shrimp moist and flavorful.
  7. Finish with lemon: Squeeze remaining half of lemon over shrimp and sprinkle with chopped fresh parsley.

Notes
