  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¾ cups granulated sugar (350g)
  • ¼ cup brown sugar, packed (50g)
  • 1 cup natural creamy peanut butter
  • ½ cup vegetable oil (120ml)
  • 1 cup buttermilk (240ml), room temperature
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ¾ cups bittersweet chocolate chunks (300g)
  • For the Peanut Butter Glaze (optional):
  • 1 cup powdered sugar (120g)
  • 4 tablespoons natural creamy peanut butter
  • 23 tablespoons milk or heavy cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat granulated sugar, brown sugar, and peanut butter until creamy and smooth.
  4. Slowly mix in vegetable oil, buttermilk, eggs, and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined.
  6. Gently fold in the bittersweet chocolate chunks with a spatula.
  7. Pour the batter evenly into the prepared pan and smooth the top.
  8. Bake for 35-40 minutes, checking at 35 minutes with a toothpick for doneness.
  9. Cool the cake completely in the pan on a cooling rack for at least 30 minutes.
  10. Whisk together powdered sugar, peanut butter, milk or cream, and vanilla extract until smooth to make the glaze.
  11. Drizzle the glaze over the cooled cake in a zigzag pattern and let it set for 10 minutes before slicing and serving.

Notes

Use creamy peanut butter for best texture. Toss chocolate chunks lightly in flour before folding to prevent sinking. Do not overmix batter to keep cake tender. Let cake cool completely before glazing to avoid melting the drizzle. Adjust buttermilk if batter is too thick. For glass pans, reduce oven temperature by 25°F (15°C).
