These incredibly moist, perfectly domed pumpkin chocolate chip muffins are made in one bowl with simple ingredients. They’re packed with melty chocolate in every bite and stay soft for days.

  • 1 cup (245g) pumpkin puree
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 1 3/4 cups (220g) all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large mixing bowl, whisk together pumpkin puree, vegetable oil, eggs, vanilla extract, granulated sugar, and brown sugar until smooth.
  3. Add flour, pumpkin pie spice, baking powder, baking soda, and salt on top of the wet mixture. Do not mix yet.
  4. Gently whisk dry ingredients into wet ingredients until just combined. A few lumps are okay; do not over-mix.
  5. Switch to a rubber spatula and fold in chocolate chips with a few strokes until evenly distributed.
  6. Divide batter evenly among the 12 muffin cups, filling them to the top.
  7. Bake at 425°F for 5 minutes, then reduce oven temperature to 350°F (175°C) without opening the door. Bake for another 13-15 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature.

Notes

For best results, use room temperature eggs. Do not over-mix the batter. The high-heat start at 425°F is crucial for domed tops. Store in an airtight container at room temperature for up to 4 days. Freeze for up to 3 months.
