  • 1 teaspoon smoked paprika
  • 4 tablespoons unsalted butter (Kerrygold recommended)

  • 1 tablespoon olive oil
  • ½ cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme leaves)
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F. Position the rack in the middle.
  2. Pat the chicken thighs dry with paper towels. Let them sit on the counter for about 10 minutes to air-dry slightly.
  3. Mix the dry rub in a small bowl: 1 teaspoon salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon smoked paprika. Sprinkle evenly over both sides of the chicken thighs and rub in gently.
  4. Heat your skillet over medium-high heat for about 2 minutes. Add 1 tablespoon olive oil and 1 tablespoon of the butter. Swirl until the butter melts and starts to foam.
  5. Place the chicken thighs skin-side down in the pan. Cook without moving for 5-6 minutes until the skin is deep golden brown and releases easily.

  11. Remove from the oven and let the chicken rest in the pan for 5 minutes. Sprinkle with fresh parsley and serve directly from the skillet.
