  • 1 large egg, room temperature

  • 1 cup white chocolate chips or melting wafers
  • 1 tablespoon coconut oil or vegetable shortening
  • 2 tablespoons powdered sugar (optional, for dusting)
  • Candy eyes (about 8 to 10 pairs)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9-inch pan with parchment paper, leaving some overhang on two sides.
  2. Cream the butter and sugar together in a large mixing bowl on medium speed for 2 to 3 minutes until light and fluffy.
  3. Add the egg and vanilla, beating on low until just combined (about 30 seconds).
  4. In a small bowl, whisk together the flour, baking powder, and salt.
  5. Add the flour mixture to the wet mixture in two additions, mixing on low after each until just combined. The dough should be soft and slightly sticky.
  6. Press the dough evenly into the prepared pan to about 1/2 inch thick.
  7. Bake for 18 to 22 minutes, until edges are golden and center is set but still soft. A toothpick inserted in the center should come out with moist crumbs.
  8. Cool completely in the pan on a cooling rack (at least 30 minutes).
  9. Lift the cookie cake out using the parchment handles and place on a serving plate.
  10. Melt the white chocolate chips and coconut oil in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth.
  11. Transfer melted white chocolate to a piping bag or zip-top bag with a snipped tip, or use a spoon. Drizzle uneven lines across the cookie cake, leaving gaps for eyes.
  12. While the white chocolate is still wet, press candy eyes into the gaps to create mummy faces.
  13. Let the white chocolate set at room temperature for about 20 minutes (or 10 minutes in the fridge).
  14. Dust with powdered sugar just before serving, if desired.
