  • 1 can (12 oz) evaporated milk
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup unsalted butter, melted
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine the pumpkin puree, evaporated milk, sugar, eggs, pumpkin pie spice, and vanilla extract. Whisk until smooth and fully combined.
  3. Pour the pumpkin mixture into the prepared baking dish and spread into an even layer.
  4. Sprinkle the dry yellow cake mix evenly over the top of the pumpkin mixture. Do not stir.
  5. If using, sprinkle the chopped pecans or walnuts over the cake mix layer.
  6. Drizzle the melted butter evenly over the entire top layer. Use a fork to gently poke the butter into the cake mix without stirring.
  7. Bake for 45-50 minutes, or until the top is golden brown and the filling is bubbly around the edges. If the top browns too quickly, tent with foil after 30 minutes.
  8. Let the cake cool on a wire rack for at least 20 minutes before serving.

For the best crunchy topping, drizzle melted butter evenly and poke it into the cake mix with a fork. Let the cake cool completely for clean slices; it tastes even better the next day.
