  • 1 cup dried elderberries
  • 4 cups water
  • 1 large cinnamon stick
  • 45 whole cloves
  • 1-inch piece fresh ginger, sliced
  • ½ to ¾ cup raw honey
  • 2 tablespoons fresh lemon juice

Instructions

  1. Place dried elderberries, cinnamon stick, whole cloves, and sliced fresh ginger into a medium saucepan. Add 4 cups of water.
  2. Bring the mixture to a boil over medium-high heat, then reduce to a simmer. Let it simmer uncovered for about 45 minutes until the liquid reduces and turns deep purple.
  3. Remove from heat and let cool slightly for 5 minutes. Strain through a fine mesh sieve or cheesecloth into a heatproof bowl or jar, pressing gently to extract liquid without pushing through seeds or skin.
  4. While the liquid is still warm (not boiling), stir in ½ to ¾ cup raw honey and 2 tablespoons fresh lemon juice. Adjust honey to taste.
  5. Pour the syrup into clean glass jars or bottles. Let cool completely before sealing and refrigerating.
  6. Shake well before each use. Take 1 tablespoon daily as a preventive measure or up to 3 tablespoons during the first signs of a cold.
