  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 tablespoon light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt, plus more for boiling
  • 4 cups water (for boiling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Rinse the pumpkin seeds thoroughly in a colander under cold water, removing any pumpkin guts.
  3. Bring 4 cups of water to a rolling boil in a large pot. Add 1 teaspoon of salt. Add the rinsed seeds and boil for exactly 10 minutes.
  4. Drain the seeds in a colander and let cool for a minute. Spread them on a clean kitchen towel or paper towels and pat dry completely.
  5. In a medium mixing bowl, whisk together the melted butter, granulated sugar, brown sugar, cinnamon, and ½ teaspoon of salt until it forms a thick paste.
  6. Add the dried seeds to the bowl and toss until every seed is coated.
  7. Spread the coated seeds in a single, even layer on the prepared baking sheet.
  8. Roast for 15 minutes, stirring at the 10-minute mark. Check for doneness—seeds should be golden brown and fragrant.
  9. Remove from the oven and let cool completely on the pan (about 20 minutes).
  10. Once cool, gently break apart any clusters with your hands.

Don’t skip the boiling step—it ensures perfectly crunchy seeds. Dry the seeds thoroughly after boiling to avoid steaming. Watch the oven closely as sugar burns quickly. For best results, use fresh cinnamon and unsalted butter. Seeds can be made a day ahead; store in an airtight container at room temperature for up to 5 days.
