  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon chopped fresh thyme or rosemary (optional)

Instructions

  1. Prepare the brine: In a large bowl, dissolve 1 tablespoon kosher salt and 1 teaspoon sugar in 4 cups cold water. Stir until fully dissolved (about 5 minutes).
  2. Brine the chicken: Submerge the chicken breasts in the brine, cover, and refrigerate for 30 minutes to 1 hour.
  3. Preheat your grill or grill pan to medium-high heat (around 400°F / 200°C), about 10 minutes.
  4. Remove chicken from brine and pat dry thoroughly with paper towels.
